Bring a little summer into your life, even if the weather can’t be bothered.
In the UK we have seen around 6 days of summer. For the most part it’s been rainy, cold, windy and generally a little grim. My go to way to bring a little seasonal joy into my life is to use seasonal food. And for baking that means using seasonal fruit.
Soft fruits are abundant at this time of year. Some have stronger flavours than others, and are therefore better for baking. Cherries are great! They remain stable inside a cake, they have a delicious flavour and they go beautifully with Almond.
Out of season I would recommend using frozen fruit to get the best flavour.
You could use this cake as a layer cake and fill with buttercream, whipped cream or a cherry jam. BUT, this cake is perfect straight from the tin, or even as dessert with a big dollop of custard on top.
