The recipe below makes 8 good sizes Macaroons. I know this photo only has 6 on it - well i had to taste test 1 2.

Almond Macaroons are not to be confused with French Macarons. There are many similarities. Macaroons are as delicious as macarons, they are scrummy with a cup of tea and they are also made from almonds, but as this Almond Macaroons recipe shows they are so much easier to make.

Macaroon vs Macaron

Macaroons and Macarons are both made from a meringue base. They both contain ground almonds, and they both taste utterly delicious.

However, Macarons are, in my opinion as a professional baker, problematic. They are tricky to master and even when you think you’ve cracked it you have a slightly humid day and they all go pear shaped. They are incredibly temperamental.

This almond macaroons recipe on the other hand is robust and is quite frankly difficult to get wrong. I first made the original recipe when I worked at a traditional English bakery. However I have updated it slightly to make it a more special.

So, if you want the fluffy, chewy, almond taste of Macarons, but without the stress and heartache of the temperamental little buggers, then this is the recipe for you! I even added a cherry on the top to show off.

Also, as a bonus, as these cookies do not contain any wheat flour they are naturally gluten free.
