There are 3 things that I refuse to bake:

  1. Cake Pops

  2. Wedding Cakes

  3. Laminated dough, i.e Puff Pastry!!!

If I have to chill, roll and fold dough countless times then I’m out.

But thankfully shop bought pastry exists, and more importantly ready rolled puff pastry exists, and it makes life so much easier.

Here are 3 of my favourite, quick and easy bakes using ready rolled puff pastry to impress your friends:

Cheese and Bacon Christmas Tree, Mince Pie Turnovers, Eccles Cakes

Cheese and Bacon Tear and Share Christmas Tree

It’s rare I do a savoury bake, but this one is a winner. I call it tear and share, but obviously sharing is optional!

You will need a baking sheet and a sharp knife

Ingredients:
1 packet of ready rolled Puff Pastry
3tbspn Ketchup
4 rashers of chopped Bacon
100gms Grated Cheddar
1 Egg
Extra Cheese for decoration

The ketchup, bacon and cheese quantities are approximate. My recommendation - measure with your heart!

  1. Pre-heat your oven to 160c fan, 180c, 350f, GM4

  2. Unroll your puff pastry and cut in half to give you 2 x A4(ish) sized pieces

  3. On a baking sheet lined with baking paper, lay one half of your puff pastry

  4. Spread on the ketchup

  5. Scatter the bacon and cheese

  6. Lay the other half of the puff pastry on top

  7. Cut the 2 top corners off to resemble a Christmas Tree Shape (see video below)

  8. Score a trunk down the centre

  9. Working from the bottom up, cut 1 inch branches out from the scored trunk

  10. Flip each branch over once

  11. With the corners you cut off, make a star and stick it on top of the tree

  12. Brush the whole things with a beaten egg and decorate with more grated cheese

  13. Bake for 20-25 minutes or until it’s golden and the cheese is bubbly

  14. Remove from the oven and serve
