This cake may look humble but believe me it has hidden oomph. The sponge is rich and coconutty, and the buttercream and glaze packs a powerful lime punch.
I made this for The Cake Shed a couple of weekends a go and it sold out super quick. It’s a good, sturdy but bright cake which can easily be used for a celebration cake or even the lower tier of a wedding or tiered cake.
It can also be baked as a loaf or a traybake for a great tea time or afternoon treat. If making a loaf I’d probably just use the glaze, and if I was making a traybake I’d smother it in buttercream.
If you don’t fancy the lime, why not team the coconut cake with chocolate for that hint of ‘Bounty’.
